Job Summary:Job Summary: Responsible for daily operations of kitchen, station production and daily paperwork, execution of line level checklist and proceduresEssential Functions: Work with Chef to schedule shifts for kitchen staffEnsure that there is no unapproved overtime on shiftCheck labor daily in Labor Management systemPerform all opening and closing kitchen supervisory tasksAssist in making decision for staff and reaching resolutions of staff issues and situationsMotivate kitchen staff for better performance and guest serviceCreate harmonious working atmosphere for staffMonitor staff compliance with all House of Blues rules and policiesAssist in performance of all job functions required of staff, including the lifting/moving of up to 40 lbs. Ensure that kitchen staff maintains clean kitchen area throughout shiftMaintain shift checklist, daily cleaning list, and master cleaning listAssist in cleaning spills, wiping surfaces and equipment, and keeping floor clean and free of food, trash, or other obstacles throughout shiftOversee food production to ensure quality and consistence with House of Blues standardsEnsure timely delivery of food items (4-6 minutes for lunch appetizer; 8-10 minutes for dinner appetizer; 8-10 minutes for lunch entrée; 12-16 minutes for dinner entrée)Communicate information and coordinate between kitchen and other departmentsMaintain cooperative relationship with other departmentsAttend and assist in manager meetingsCommunicate information between kitchen staff and managersAssist other employees as neededJob Qualifications: Required:Knowledge of high volume kitchen operationsAbility to run all kitchen operationsKnowledge of food costs, labor costs, and product costsSkill in cooking, cost controls, and managementCrew development, and crew training proceduresHigh School diplomaKnowledge of kitchen sanitation proceduresComputer knowledge including Microsoft Word and ExcelPreferred:College degree or related experienceOperations and procedures of a multi-faceted entertainment facilityAbility to organize and manage timePhysical Demands/Working Environment:Working environment is fast-pacedPosition requires extended periods of prolonged standing and working on your feetMust be able to lift and/or move up to 40 lbs.This job description is a summary of duties that you as a TeamMember are expected to perform in your assignment.
